Organic Egg Peppermint Christmas Trees

4 Butlers organic egg whites
250g caster sugar
1/2 tsp green food colouring gel
4 drops peppermint extract
Yellow fondant icing
Preheat your oven to 120C/100C fan/ 250 F/ Gas 1/2 & line two baking trays and set aside.
In a clean dry mixing bowl, add the room temperature egg whites and whisk until thick and frothy.
Gradually start adding the caster sugar, a tablespoon at a time until you are left with a thick glossy meringue mixture.
To this add the green food colouring gel and peppermint extract and whisk to combine.
Spoon this mixture into a piping bag fitted with a large star shaped nozzle and pipe 12 Christmas trees onto the lined trays.
Sprinkle with hundreds & thousands and place in the oven and bake for 1 hour.
Remove and allow to cool.
While cooling, roll out some yellow fondant and cut out 12 stars.
When the meringues are cool, pop a star on top using icing sugar paste or whipped cream as glue.
These are delicious as is or served with some semi whipped cream.
